Strawberry honey oatmeal bars

Pastry Affair. Have I told you about this wondrous blog? Of course! It’s where I found the recipe for the strawberry balsamic jam I used in this recipe! These bars were right in character with the jam. Perfect-o! Go check out that blog – good stuff. These bars? Even better than I imagined. Although, my bars were a lot messier than her bars. Hm. I might have to bake for a longer time next time (I live at altitude, folks. Adjustments I make are not necessarily what you have to make when baking!). Of course, you should bake this according to the time posted below, but if you feel you should go longer, by all means, go ahead! ANYWAYS, these bars are amazing. They are easy to throw together and make a great snack – I feel like they are healthier than your typical cookie or other sort of bar because they have oats in them. 🙂 These taste great cold, but I prefer them warm. I might have even tried it with vanilla bean ice cream and loved it, might have. Just sayin’. 😉 Something to consider when you’re making these: it’s really the jam that makes or breaks this recipe – so choose a jam you love, can’t get enough of. Look at the gooey jam! So delicious.

What you need:
6 tablespoons unsalted butter
1/2 cup brown sugar, packed
1 egg
1/4 cup honey
1 1/2 cups old fashioned oats
1/2 cup all purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup strawberry jam

What to do:
Preheat oven to 350 degrees F (180 degrees C). Lightly grease an 8×8-inch pan.

In a large mixing bowl, cream together butter and sugar. Add the egg and honey, mixing until blended. Stir in the oats, flours, baking soda, and salt. Batter will be slightly sticky. Using floured hands, press 3/4 of the batter into the bottom of the prepared pan. Spread strawberry jam evenly over the top. Crumble the remaining 1/4 of the batter on top.

Bake for 25-30 minutes, or until lightly browned. Allow to cool slightly in pan before serving.
