Strawberry shake

Happy Fall!!! I meant to bake this weekend so I’d have something fall-related to post today. Fail on my part (Steph came to visit, so we were a bit busy!). 😉 I’ll make an effort to bake something fall-ish this week! So, for today, I have a strawberry shake recipe that is rich in vitamin C, potassium and antioxidants. Plus, because of the quinoa added, it has protein too! Thank you, “Quinoa 365: The Everyday Superfood” for another amazing one. The recipe I have below is from the original in the book – please go get the book! This shake was thick and creamy – a great afternoon treat to tide me over until dinner. Or, you might want to have this for breakfast! 🙂

If you don’t have vanilla yogurt on hand, simply substitute plain or natural yogurt mixed with 1/4 tsp pure vanilla extract and 1 tsp honey.

Place all the ingredients into the blender!

Pour into a glass and enjoy!

What you need:
1 tbsp quinoa flour
2 tbsps boiling water
3/4 cup frozen strawberry
1/2 cup vanilla yogurt
1/4 cup milk or soy milk

What to do:
Place the quinoa flour and boiling water in a small bowl, stir until a paste has formed. Place the quinoa paste, strawberries, yogurt and milk in a blender. Purée into a smoothie and serve immediately. Enjoy!
